Tender Touch

Prized by cooks for their ability to add flavor to beef before cooking, marinades—from the Italian “marinare” to soak or pickle in brine—perform double duty by tenderizing meat. Basic marinades include oil and citrus juice, with wine, vinegar, seasonings and spices often rounding out the mix.


¼ cup lemon juice
½ teaspoon hot pepper flakes
½ teaspoon cracked black pepper
½ teaspoon coarse salt
4 strips lemon peel
3 gloves garlic, minced
¼ cup coarsely chopped fresh parsley
¼ cup coarsely chopped fresh basil,
cilantro, dill, oregano, or a mix
of all four
½ cup extra-virgin olive oil


Combine lemon juice, pepper flakes, cracked pepper and salt in a bowl. Whisk until salt is dissolved. Add lemon peel, garlic, parsley and basil. Stir or whisk in olive oil. Yields about 1 cup. The virtue of this marinade is its freshness. Use within two hours of making. Stir again before using.

Getting out of the valley and climbing to the mountain top

So many of us settle for so little when we can have so much more. We are content with what life throws at us. Working a 9 to 5, unhappy with our bosses, unhappy with where our careers are headed, unhappy with our lives in general. Yet we still get up out our beds every day to live our not so happy lives because as lifeless as our jobs and our situations might be…dealing with our boss is the only way that we can get our bills paid.

Seventy percent of the world’s population is stuck in a situation that they don’t want to be in. So many college graduates get their degrees, but can not find a job to support them and pay back there student loans. Why do you think that the financial aid department offers graduating students a deferred plan up to ten years to pay back the loan? It might just take you ten years to find that perfect job to pay back that 30,000 plus loan back!!

Enough is enough…..why should we work hard just to help the owner of that company or corporation live better while we grow weak working towards a dream that is not our own?

It is time to move out of the valley and climb to the mountain top. Stop accepting what life throws at us. Let us fight towards our dreams and goals. If owning that business is what you want and you have a vision take it one day at a time. Get a business plan into order and execute that plan.

The worlds in an open field and once you have your foot on first base there is a chance that you will make a home run!!

Depression is very common !

The good news is that depression is treatable. You can tell your doctor about your symptoms or if you don’t have a doctor you can call the Nation Institute of Mental Health.

Mortgage securities downgraded

New York-Hours after Standard & Poor’s warned it may cut the credit rating of more than $12 billion in bonds backed by risky home loans; another agency downgraded its rating on hundreds of similar securities.

Both S&P and Moody’s Investors Service said they made the moves because borrowers are missing mortgage payments at levels much higher than anticipated.

The concern is significant because the bonds-many sold by some of Wall Street’s biggest banks-represent a principal source of financing for the housing market. Lower ratings for mortgage-backed bonds could cause a domino effect that might ultimately strangle what until this year was a major propel lent of home prices: easy access to money.

Moody’s lowered its rating on 399 of the bonds, known as residential mortgage-backed securities, and said it may down-grad 32 more. All of the bonds were issued in 2006.

Bi - Racial Beauties!

I’m a student at the Paralegal Studies Program at FDU in Madison, New Jersey and I have been attending an Employment Law Class for the past two weeks. I have been in this career for over 9 years, but I was shocked to learn that your employer is liable for the actions of the employee or employees if you go to the supervisor or the person in charge of the actions and functions of the employees to complain about any harassing or disturbing behavior. If you report to the “correct” person and he or she does nothing about your situation they may have a law suit on their hands.

This was most shocking to me because I am a half-black, half-Italian 28 year old female that had been the victim of racism for at least 6 months. I never thought in my wildest dreams that I would be the victim of such because I am an attractive female with blue-green eyes, fair skin, and medium length hair and speak proper English. In other words if I didn’t tell anyone that my mother was African-American I could be a candidate to play a role in “Imitation of Life”.

I worked with a white secretary that was highly offended by the fact that I was a bi-racial female employed at an all “white” firm. Never in the years that she had been working there had they ever broke the rules of conduct. She was even more offended because she felt that I had some how “tricked” them into hiring me. I guess at the day of my interview I should have mentioned that I was half-black since it was such a huge factor. Despite the fact that I am a highly qualified Paralegal somehow didn’t matter because my blood is mixed with “black” and I am automatically “not right for the position”.

It is sad to think that I live in a world where we are stuck on race. We are all beautiful no matter what walk of life we come from. I am proud of my race. I am proud that my parents saw past color and saw love. Look at what love created. I am nothing less than perfect. I am a bi-racial beauty who might eventually be a rich bi-racial beauty depending on my old firm’s insurance policy.

So many women and men fall into the trap of trying to stay in a relationship because he/she wants to make it “better”. We think if we love harder that we can change the person that we are with. The sad truth is that we can not “love” the other person into loving us. We must first love ourselves to realize that what we are receiving from the person we think loves us is not really love at all. That person who call us names, shouts at us, hits on us……and so many more painful things is not the love of our life, but indeed a conspirator to murder. They might not pull the trigger, but they hand you the “gun” and force you to believe that you are nothing………..so are you going to pull the trigger? Or will you take my hand and let me help us get through this together?

The generation that wouldn't trust anyone over 30

Average life expectancy in the U.S. has risen to an all time high. However, the amount of money people put away for retirement isn't rising at all. How is our nation going to make sure its citizens have the money to retire? Here are some ideas to think about:

Americans will not be able to rely solely on Social Security for a comfortable retirement. In the future, it's projected to cover an increasingly smaller percentage of the average retirement. There's debate as to whether it should be repaired or replaced. But what's clear is we need to reform Social Security now. Unless action is taken soon to strengthen Social Security, in just 11 years we will begin paying more in benefits than we collect in taxes. Without changes, by 2040 the Social Security Trust Fund will be exhausted.

II. WORK TO BUILD A SECURE FUTURE...
Companies should continue looking for ways to encourage employees to participate in retirement plans such as, 401(k) plan, profit sharing plan, and 457 plan (governmental).
